French Onion Mac and Cheese

Pasta with a cheese-y, onion-y sauce broiled to bubbly perfection. Check it out here!

I give this recipe a 5 for tasty and a 4 for easy. Timing can be a little tricky but you can always finish the sauce and turn down the heat while the pasta cooks.

  • 2 tablespoons butter

  • 2 pounds yellow onions, sliced thin

  • Kosher salt & coarse ground black pepper

  • 4 or 5 fresh thyme stems, with the leaves picked off

  • 1 large clove garlic, minced

  • ¼ cup vermouth

  • One pound dried pasta - any shape is good, but a tube shape like a penne or paccheri works best

  • 1 cup beef broth

  • 1 cup whipping cream

  • ½ pound shredded Gruyere cheese

  • ¼ pound shredded white cheddar

  • 1.5 - 2 ounces crispy fried onions, like the ones you use at Thanksgiving

 

Hi! Welcome to Beth Cook's The Internet. I'm Beth, and today I'm making a recipe sent in by my friend Nairi. It's French Onion Mac and Cheese from Sam the Cooking Guy. The first step is to prep the ingredients. We're ready. Now we're going to start cooking the onions and get the water ready to boil the pasta. I'm going to melt two tablespoons of butter in the pan, then cook two large onions. I'm going to season with salt and pepper and add the thyme to the onions. Then cook for about 15 to 20 minutes until they're brown. Now I'm going to deglaze with one quarter cup vermouth and add one clove of minced garlic. 

The water is boiling, so it's time to add one pound of pasta. When the garlic is fragrant, it's time to add one cup each of heavy cream and beef broth. I'm going to bring the whole mixture to a boil, then reduce to a simmer until slightly second. Now it's time to add the pasta and the cheese to the sauce. I have a half pound of gruyere and a quarter pound of sharp cheddar. I'm going to hold back about a quarter cup of each type of cheese to sprinkle on top. Now it's time to add the pasta to my serving dish, then sprinkle the top with crispy onions and the rest of the cheese. This is going under the broiler for a few minutes until the top layer of cheese is nice and melted.
