Pumpkin Pancakes

I give this recipe a 5 for tasty and a 5 for easy. This doesn’t take any special tools or ingredients.

  • 2 Cups All Purpose Flour

  • 3 Teaspoons Baking Powder

  • 1 Teaspoon Salt

  • 1 ½ Teaspoons Ground Cinnamon

  • ½ Teaspoon Ground Ginger

  • ½ Teaspoon Ground Nutmeg

  • ¼ Cup Brown Sugar

  • ¼ Cup Granulated Sugar

  • 1 Teaspoon Vanilla Extract

  • 1 Cup Pumpkin Puree

  • 2 Large Eggs

  • 4 Tablespoons Butter Melted

  • 1 ½ Cups Milk

 

Hi. Welcome to Beth Cook's The Internet. I'm Beth, and today I'm making pumpkin pancakes courtesy of the salty marshmallow. First step is to measure out all the ingredients. Now we're going to mix together the dry ingredients minus the sugars into this bowl with two cups of flour. I'm going to add three teaspoons of baking powder, one teaspoon of salt, one and one half teaspoon, cinnamon, one half teaspoon, nutmeg and one half teaspoon of ground ginger. Now we're going to mix all the wet ingredients plus the sugars in another bowl. First is one quarter cup brown sugar, then one quarter cup, white sugar, two eggs, one cup of pumpkin puree, four tablespoons of butter, one teaspoon of vanilla extract and one and one half cups milk. 

Now, to add the wet ingredients to the dry and whisk them together, being careful not to over mix, the batter is going to rest for about 5 minutes while I heat up my cast iron to cook the pancakes in. To cook the pancakes, I'm going to spray my cast iron with some nonstick spray and scooping the batter one third cup at a time, Cook four pancakes at a time. They're going to take about 4 minutes per side. It's time to play. You can use any kind of toppings you want. I'm going to have some powdered sugar, a pad of butter and some maple syrup.
