Honey Prawns

I give this recipe a 5 for tasty and a 4 for easy. Deep frying can be a little intimidating but with the right tools is a delicious and fun way to cook!

Prawns:

  • 300g/ 10oz prawns/shrimp

  • 1/2 tsp salt

Dredging:

  • 1/2 cup cornstarch

Fry Batter:

  • 9 tbsp cornflour/cornstarch

  • 6 tbsp flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 2/3 cup + 1 tbsp cold club soda

Oil, for Frying:

  • 3 – 4 cups vegetable or canola oil

Honey Sauce:

  • 1/3 cup honey

  • 1.5 tbsp corn syrup

  • 1 tbsp light soy sauce

  • 2 tsp Chinese cooking wine, or mirin

Garnish/Serving:

  • 2 oz Vermicelli rice noodles (I used cabbage)

  • Sesame seeds, finely sliced green onions

 

Hi. Welcome to Beth Cook's The Internet. I'm Beth, and today I'm making Honey Prawns, courtesy of RecipeTin Eats. My very first step is to start heating my fry oil to 320 degrees. Now to prep the ingredients. 

To prep the shrimp first I'm going to hit it with about a half a teaspoon of salt, then dredge them one at a time in some cornstarch. 

Now we're going to make the batter. Nine tablespoons of cornstarch, six tablespoons of flour, a half teaspoon each of baking powder and salt, and finally, two thirds cup plus one tablespoon of club soda. I'm going to take each shrimp, dip it in the batter and put it in the cooking oil. They're going to cook for about 3 minutes, then they're going to cool for 20 minutes. Now it's time to make the honey sauce. A third cup of honey. One and a half tablespoons of light corn syrup. One tablespoon of soy sauce and two teaspoons of mirin. Bring it to a simmer, cook for about 3 minutes and then take it off the heat and cover to keep it warm until the shrimp are ready. 

The shrimp are going to cook for another 3 minutes until golden, brown and delicious. Then we're going to toss them in the sauce. The recipe calls for fried vermicelli noodles, I'm going to use green cabbage instead. And then a little bit of green onion and some sesame seeds. And there we have it.
