Chorizo-Stuffed Poblano Peppers

I give this recipe a 5 for tasty and easy. It’s creamy filling is so good, and it’s simple to swap out cheeses, peppers, proteins, and cooking methods!

Here are the ingredients you’ll need:

  • 1 tablespoon (15ml) olive oil

  • 1 small onion (7 ounces; 200g), minced

  • 4 medium cloves garlic (20g), minced

  • 2/3 pound (300g) raw Mexican chorizo, removed from casings

  • 1 1/2 cups (260g) cooked white rice

  • 2 medium roma tomatoes (220g), seeded and diced

  • 1/3 cup (15g) finely chopped fresh cilantro

  • 1/3 cup (75g) Mexican crema, or sour cream

  • 1/4 cup (25g) grated Cotija cheese

  • Kosher salt

  • Freshly ground black pepper

  • 4 large poblano peppers, halved lengthwise and seeded

  • 1 cup (110g) shredded pepper jack cheese
