Shrimp Bao

Bao tastes amazing when it’s fresh and homemade! Find this King Arthur Baking recipe here!

I gave this recipe a 5 for taste and 3 ease! The dough comes together pretty easily, as does the filling, but you do need a steamer setup to get it done.

Here are the ingredients you’ll need:

Dough

  • 1 cup (227g) milk, warm*

  • 1 heaping teaspoon instant yeast

  • 3 cups (360g) all purpose flour

  • 6 tablespoons (74g) granulated sugar

  • 1/2 teaspoon salt

  • 1 tablespoon vegetable oil, plus more for coating the bowl

  • 1/2 teaspoon baking powder, optional

*Substitute unsweetened unflavored plant-based milk (or water) for dairy milk, if desired. 

Glaze

  • 3 scallions, finely chopped, green part only

  • 1/2 teaspoon salt

  • 1/4 teaspoon granulated sugar

  • 1 tablespoon sesame oil

Lobster filling

  • three 1 1/2-pound lobsters, steamed*

  • 5 scallions, coarsely chopped

  • 1 to 3 teaspoons fresh ginger, grated; to taste

  • 1 to 3 teaspoons garlic, minced; to taste

  • 1 tablespoon toasted sesame oil

  • 1 teaspoon soy sauce

  • 1/2 teaspoon rice wine vinegar

  • 1/8 teaspoon salt

*Or substitute 360g (a scant pound) of cooked lobster meat or shrimp.
